This summer salad combines all the goodness that comes from spinach, beetroot, pomegranates, avocado, walnuts, and salmon along with a tasty salad dressing. Delicious and good for you!

Ingredients:

– Fresh spinach leaves:

Includes antioxidants, particularly carotenoids, which help protect the brain from oxidative stress and inflammation.

– Sliced beetroot:

Rich in natural nitrates that help improve blood flow to the brain. This increased blood flow can help improve cognitive function.

– Pomegranate seeds:

Packed with antioxidants, these antioxidants help combat oxidative stress and inflammation in the brain, protecting against age-related cognitive decline.

– Avocado, diced:

A great source of healthy fats and vitamin E. These fats help support proper brain function and vitamin E acts as an antioxidant and protects brain cells from damage.

– Walnuts, roughly chopped:

Full of omega-3 fatty acids, which are associated with improved cognitive function.

– Cooked salmon fillet, flaked:

Excellent source of omega-3 fatty acids, especially docosahexaenoic acid (DHA). DHA is a vital component of brain cell membranes and plays a crucial role in brain development and function.

– Salt and pepper, to taste.

For the dressing:

– 2 tablespoons extra virgin olive oil

– 1 tablespoon lemon juice

– 1 teaspoon honey

– 1/2 teaspoon Dijon mustard

 

Instructions:

  1.  First, prepare the dressing. In a small bowl, whisk together the olive oil, lemon juice, honey, and Dijon mustard until well combined. Set that aside while you make the salad.
  2.   In a large salad bowl, add the fresh spinach leaves as the base.
  3.  Add the sliced beetroot on top of the spinach leaves.
  4.  Sprinkle the pomegranate seeds over the beetroots, followed by the diced avocado.
  5.  Scatter the chopped walnuts across the salad.
  6.  Finally, add the flaked salmon over the salad.
  7.  Season the salad with salt and pepper according to your taste.
  8.  Drizzle the dressing over the salad just before serving. You can adjust the amount of dressing based on your preference.
  9.  Gently toss the salad ingredients together to ensure everything is well coated with the dressing.
  10.  Serve and enjoy.

Note: You can also customise this salad by adding other ingredients such as cherry tomatoes, cucumber, or feta cheese according to your preference.
